If today is one of those days that you crave for a light and simple lunch, then this one is perfect for your. Simply wrap this salad with the tortillas that you made--easy and healthy, yet hearty and flavorful.
Ingredients (for one person):
1 medium carrot
1 medium turnip
1 Tbsp salt
Dressing:
1Tbsp light soy sauce
1tsp mirin
1tsp rice vinegar
On top:
1/2 grounded Sichuan peppercorn
1tsp red pepper flakes
1Tbsp sesame oil
Procedure:
Peel carrot and turnip and use the peeler to shave those into long strips. Mix with salt and sit for about 20mins. Rinse the carrot and turnip strips under tap water and squeeze out most of the liquid. Put pepper flakes and grounded peppercorn on the salad and pour heated sesame oil on top. Serve with dressing.
